A stress-free approach to the essential methods and techniques of chicken cookery (braising, roasting and sautéing). In this class, you will learn to create these amazing chicken cookery dishes with an air of confidence and the most delicious, palate pleasing results! Coq au Vin (Chicken fricassee braised in a red wine sauce of mushrooms, onions and bacon lardons), Poulet Rôti (The perfect, whole roasted chicken w/ fresh herbs, lemons, and aromatics), Sauté de Poulet au Citron et aux Câpres (Sautéed boneless, skinless chicken breast paillards w/ lemon, caper, parsley, and butter sauce) Accompanied with tomato Provençal, roasted creamer rosemary potatoes and a seasonal vegetable.

In this intensive class we will create 4 incredibly delicious, savory, homemade pasta sauces that will sure to be your go to favorites. All these delicious sauces will be paired with cooked to order, “al dente” durum wheat-semolina pasta. Gluten free pasta can be available upon advance request. Spaghetti Carbonara, Penne alla Puttanesca, Gemelli Pasta w/ Basil-Spinach-Arugula-Almond-Garlic-Pesto and Rigatoni Rigate w/ Rich and Meaty Bolognese Sauce. Plenty of good eats in this class!
