Chicken Cookery Class/ La Cuisine du Poulet Thursday, November 7th/ 6pm to 9pm/ Customer Favorite/ Essentials (125.) per person/ 3 openings available
A stress-free approach to the essential methods and techniques of chicken cookery (braising, roasting and sautéing). In this class, you will learn to create these amazing chicken cookery dishes with an air of confidence and the most delicious, palate pleasing results! Coq au Vin (Chicken fricassee braised in a red wine sauce of mushrooms, onions and bacon lardons), Poulet Rôti (The perfect, whole roasted chicken w/ fresh herbs, lemons, and aromatics), Sauté de Poulet au Citron et aux Câpres (Sautéed boneless, skinless chicken breast paillards w/ lemon, caper, parsley, and butter sauce) Accompanied with tomato Provençal, roasted creamer rosemary potatoes and a seasonal vegetable.
Pasta Sauces Class/ Saturday, November 9th / 11am to 2pm/ Featured Spotlight Class (125.) per person/ 4 openings available
In this intensive class we will create 4 incredibly delicious, savory, homemade pasta sauces that will sure to be your go to favorites. All these delicious sauces will be paired with cooked to order, “al dente” durum wheat-semolina pasta. Gluten free pasta can be available upon advance request. Spaghetti Carbonara, Penne alla Puttanesca, Gemelli Pasta w/ Basil-Spinach-Arugula-Almond-Garlic-Pesto and Rigatoni Rigate w/ Rich and Meaty Bolognese Sauce. Plenty of good eats in this class!

Learn to make fresh, scratch made egg pasta dough, rolled out into sheets, and fashioned into stuffed, handcrafted ravioli as well as mountains of fresh cut fettuccine all with a combination of savory sauces: Fettuccine with Basil-Arugula-Spinach Pesto (Fresh cut, homemade egg fettuccine with basil-arugula-spinach-garlic-almond pesto)

Fresh, exotic, healthy and flavorful Vegetarian/Vegan Indian Cooking with a myriad of spices! Handmade Phulkas (Homemade, Griddled, Indian style Flatbreads), Gobhi Sarson (Cauliflower, Mustard Greens, Garbanzo Beans, Chilies, Ginger, and Spices) Kachumber Salad (North Indian Cucumber Salad) Dal Saag (Simmered Lentils w/ Spinach and Spices) and Mint Raita (Yogurt-Mint Sauce) This menu is all *VEGAN except the yogurt sauce which is served on the side.

Master the artistry and sublime elegance in creating these amazing, light and airy sweet and savory soufflés! These mouthwatering delicious soufflés are fun and easy to make once you know the techniques and tricks of the trade! Soufflé Tomate Basilic (Tomato-Basil and Cheddar Cheese Souffle) Grand Marnier Soufflés (Light and airy soufflés with orange-cognac liqueur) Soufflé au Fromage avec Herbes (Gruyère cheese-fines herbes soufflés) and Bittersweet Chocolate Soufflés with Crème Anglaise... We'll make them all!

Celebrate the fall and holiday seasons with this sumptuous-mouth-watering Northern Italian-Lombardian feast! In this class we'll create an amazing menu featuring: Polenta Casseruola al Forno (Layered Polenta Casserole w/ Fontina, Taleggio and Parmesan Cheeses), Carciofi Bolliti con Vinaigrette (Boiled Globe Artichokes w/ Caper-Sun-Dried Tomato dressing) Tacchino Brasato ai Funghi e Rosmarino (Braised Turkey Thighs in a Luscious Red Wine Sauce with Porcini Mushrooms, Pancetta, Onions and Rosemary) and Granita di Melograno (Refreshing, Icy Pomegranate-Rose Water and Lime Juice Granita) Buon Appetito!
